Today I decided to take a crack at this Pear Pie. Pear Pie, you ask? Yes, and let me tell you, it is wonderful. My crust came out just as perfect as it could be and the pie....wow. Now why is it that I cannot lose weight? Anyway, I think the pie would make my Grandma Golle proud.
Introducing the Pear Pie
As requested, here is the Pear Pie recipe
I got it off of Allrecipes and tailored it to suit what I felt would be good.
INGREDIENTS
1 (9 inch) unbaked pie crust (see next recipe)
4-5 VERY RIPE pears - peeled, cored and cut in half (think soft)
2/3 cup white sugar
1/3 cup brown sugar
1/3 cup butter
1/4 cup all-purpose flour
1/2 tablespoon vanilla extract (or you can just do the 1 tbsp. vanilla)
1/2 tablespoon almond extract
3 eggs, beaten
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
Press the pie pastry into the bottom and up the sides of a 9 inch pie plate. Flute the edges. Place the pear halves cut side down in the pie crust with the small ends toward the center.
In a medium bowl, mix the butter and sugars together until smooth, then beat in the eggs one at a time until light and fluffy. Stir in flour and vanilla/almond extract. Pour over the top of the pears.
Bake for 1 hour in the preheated oven, until pears are soft and custard is set in the center. Cool completely before slicing and serving.

INGREDIENTS
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/4 cup shortening, chilled and diced
1/4 cup real butter, chilled and diced
3 tablespoons ice water
DIRECTIONS
Whisk the flour and salt together in a medium size bowl. With a pastry blender, cut in the cold shortening until the mixture resembles coarse crumbs. Drizzle 2 to 3 tablespoons ice water over flour. Toss mixture with a fork to moisten, adding more water a few drops at a time until the dough comes together.
Gently gather dough particles together into a ball. Wrap in plastic wrap, and chill for at least 30 minutes before rolling.
Roll out dough, and put in a pie plate. Fill with desired filling and bake.
